These authentic Mexican burritos taste great and fill you up. They have a tasty mix of rice, beans, meat, and vegetables inside, all wrapped in a warm flour tortilla. Add your favorite toppings, like sour cream, salsa, and guacamole, to make them your own.
Ingredients: 2 cups cooked rice. 1 pound ground beef or shredded chicken. 1 onion, chopped. 2 cloves garlic, minced. 1 bell pepper, diced. 1 can 15 oz black beans, drained and rinsed. 1 cup corn kernels fresh or frozen. 1 teaspoon ground cumin. 1 teaspoon chili powder. Salt and pepper to taste. 1 cup shredded cheddar cheese. 4 large flour tortillas. Salsa, guacamole, and sour cream for serving. Chopped fresh cilantro for garnish.
Instructions: In a large skillet, cook the ground beef or shredded chicken over medium heat until browned and cooked through. Drain any excess fat and set aside. In the same skillet, add a bit of oil if needed and saut the chopped onion, garlic, and bell pepper until they become tender. Stir in the cooked rice, black beans, corn, ground cumin, chili powder, salt, and pepper. Cook for a few more minutes until everything is well combined and heated through. Warm the flour tortillas in a dry skillet or microwave for about 20 seconds to make them pliable. Place a portion of the rice and bean mixture onto each tortilla, followed by the cooked meat and shredded cheddar cheese. Fold in the sides of the tortillas and then roll them up tightly to form burritos. Optional: Heat the burritos in a skillet for a few minutes on each side until they are golden and crispy.
