These Minty Green Chocolate Cream Bars are a great mix of rich chocolate flavor and creamy minty goodness. You can enjoy a little sweetness with them without having to worry about dairy or animal products.
Ingredients: 2 cups soaked cashews. 1 cup coconut cream. 1/2 cup maple syrup. 1/4 cup melted coconut oil. 1 teaspoon vanilla extract. 1/2 teaspoon peppermint extract. 1/4 teaspoon salt. 1/2 cup spinach leaves. 1/4 cup fresh mint leaves. 1/2 cup cacao powder. 1/4 cup melted coconut oil. 1/4 cup maple syrup. 1/2 teaspoon vanilla extract. Pinch of salt.
Instructions: Soaked cashews, coconut cream, maple syrup, melted coconut oil, vanilla extract, peppermint extract, and salt should all be put into a blender. Mix until it's smooth. Split the mix in half. Add fresh mint leaves and spinach leaves to half of it. Mix until smooth and green. Spread out the green mixture in a square baking dish that has been lined with foil. Then put it in the freezer to set. To make the chocolate layer, melt the coconut oil and mix it with the maple syrup, vanilla extract, and a pinch of salt until the mixture is smooth. After the green layer has set a bit, add the chocolate layer and spread it out evenly. Put it back in the freezer and wait at least 4 hours, or until it's firm. Cut into bars and serve cold after it's set. Have fun!
