My favorite breakfast - Miso Soup
So as title is described, my favorite breakfast is my version of miso soup. By version, I mean I probably offend someone with the bastardization of culture to make this. But I like it, I don't know what else to call it. Anyhow, anyway - I dislike sweet things for breakfast.. most of the time. This soup makes me happy, sometimes I turn it into a rice gruel like situation with a few tablespoons of rice thrown in there. Its tasty, gets my "meat" cravings out. Since I grew up with a fried eggs, biscuits and gravy, and let's coat the world in lard and butter world. Which I mean... I miss, because I'm realistic. But I can duplicate. This is quick, easy and yummy. Serve with rice, baked tofu, vegan tuna cakes,, vegan fried fish, seitan, roasted veggies, and what have you.
I have legit ate this for breakfast, lunch and dinner before. So do what ye will but harm none.
1/4 pack of tofu drained well, I prefer silken
2 tbsp of white miso, or yellow.
Handful of sliced mushrooms
1-2 chopped stalks of green onion
1/2 tsp Minced or grated ginger
2 cloves minced or pressed garlic
*switch up to personal taste*
Cube gently your tofu and put in bowl. Add garlic, 1.5 tbsp soy, mirin and ginger to the bowl. Mix carefully, let sit for 10 - 15 minutes or make it night before.
Heat water to boiling, take ladle full of water add miso and mix until dissolved. Return to pot, add veggies, tofu with marinade.
Simmer for a few minutes, turn off. Let sit for 10 minutes to cool some.
Gives me one big bowl and my kids each a child's serving. Sooo? Two adult, four kids?
