Lunch today! This was amazing...it feels good to eat such a yummy (AND healthy) meal to end off 2017! I mixed together red and white quinoa, brown lentils, small seedless grapes, yellow peppers, rocket, shredded beetroot, hummus, and added some low fat feta and walnuts (I love a bit of extra crunch in my salads)! #fresh #salad #healthyisnotboring #walnutsfordays #mixuptecolours (at JLT)
