Ingredients: For the Cookies:. - 1 cup butter, softened. - 1 cup brown sugar, packed. - 1/4 cup molasses. - 1 egg. - 2 teaspoons ground ginger. - 1 teaspoon ground cinnamon. - 1/2 teaspoon ground nutmeg. - 1/4 teaspoon ground cloves. - 2 cups all-purpose flour. - 1/4 cup cocoa powder. - 1/2 teaspoon baking powder. - 1/4 teaspoon salt. For the Filling:. - 1/2 cup butter, softened. - 2 cups powdered sugar. - 2 tablespoons cocoa powder. - 1 teaspoon instant coffee granules. - 1 teaspoon vanilla extract.
Instructions: Set the oven to 350F 175C and heat it up. Mix the butter, brown sugar, and molasses in a large bowl until the mixture is light and fluffy. Add the egg and beat well. Mix the cloves, cinnamon, ginger, nutmeg, and flour in a different bowl. Add the baking powder, cocoa powder, and salt and mix them all together. Slowly add the dry ingredients to the wet ones and mix them together until they are well mixed. Place dough balls about 2 inches apart, each about the size of a tablespoon, on a baking sheet. Use the back of a spoon to slightly flatten each piece. Put it in the oven for 10 to 12 minutes, or until the edges are set. Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. In a bowl, beat the softened butter until it is smooth and creamy. Powdered sugar, cocoa powder, instant coffee granules, and vanilla extract should be added slowly. Blend or beat until smooth and well mixed. Spread the filling on the flat side of half of the cookies once they are completely cool. You can also pipe it on. Add the last few cookies on top to make a sandwich cookie.
