I don't really know how to describe MatPat except to say "you may know of him from [other stuff I've done]." He is someone who writes about video games and other nerd topics, sometimes in a fun way that's kind of like a "let me tell you about my hyperfixations" way, but who has also become a meme for the ways in which he tries to "break down" video games so you can explain them to a child.

I think the "let me explain things to a child" angle has gotten a lot less popular over time, but that doesn't mean people have stopped doing it!

I think the Skip the Cat series is one of his best, but I have no idea how to give a good non-meme explanation of it, other than the "inventor of the universe gets bored" angle.

(He is also the guy who invented the "gambling" genre of youtube videos, which -- although I'd never used that word before -- feels kind of appropriate in a lot of ways. You get to see video games that are like gambling but with no real-world consequences (or rather, with only very weak real-world consequences.) It seems like he's gotten a lot of mileage out of this, with his "How Badly Can I Play Videogames" series and the like.)
