Ingredients: 1 cup muesli. 1/2 cup whole wheat flour. 1/4 cup butter, softened. 1/4 cup honey. 1 egg. 1/2 teaspoon vanilla extract. 1/4 teaspoon baking soda. 1/4 teaspoon salt. 1/4 cup raisins. 1/4 cup chopped nuts e.g., almonds, walnuts. 1/4 cup dark chocolate chips.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a mixing bowl, combine the softened butter and honey. Mix until creamy. Add the egg and vanilla extract to the mixture. Mix well. In a separate bowl, whisk together the muesli, whole wheat flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the raisins, chopped nuts, and dark chocolate chips. Using a spoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet. Flatten each cookie slightly with the back of the spoon. Bake in the preheated oven for about 10-12 minutes or until the edges turn golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
