DIY LUNCH: Minestrone soup using #SaladMaster #MultipurposeCooker #Mp5! So happy! #EatsTerrific Ingredients: 2 tbsp extra virgin olive oil 2 cloves garlic, minced 2 Knorr beef cubes 1/2 cup left over roasted glazed pork, sliced 1 medium white onion, sliced 1 cup sliced celery 2 pcs laurel leaves 1 medium carrot, diced 1 large potato, diced 1 cup broccoli, sliced 1/2 medium cabbage, sliced 10 pcs fresh basil leaves 1 can diced tomatoes, 400g 600g water 2-3 tbsp grated Parmesan cheese 1 tbsp salt 1/2 tsp ground black pepper 1 can red kidney beans, drained Procedure: 1. Preheat your #Mp5 at 250dF. Pour oil then sauté garlic for 20secs. Add pork meat and Knorr cubes. Mix well till cubes are dissolved. 2. Add onions and carrots. Give it a good mix then drizzle with black pepper. Simmer for a minute then add celery and laurel leaves. Mix together then put diced potatoes, broccoli and cabbage. Add salt and mix well. 3. Put in diced tomatoes and water. Add grated Parmesan cheese. Cover pan. Set timer to 30mins maintaining at 250dF heat. 4. When the Vapo-valve clicks, check on contents and stir. Taste test and adjust based on preference. At the 15min Mark, add red kidney beans. Cover pan and allow to simmer. 5. At the end of the 30mins, check on the beans if tender. I proceeded to simmer for another 10mins reducing heat to 150dF. Put in basil leaves. 6. Serve hot with toasted bread! Bon apetit!
