Grilled Veggies and Stuffed Swiss Brown Mushrooms
**This can be made vegan-friendly and salt-free...Follow the options.**
Grilled Veggie Ingredients:
- zucchinis, quartered
- baby eggplants, sliced to bite size
- purple yam
- sweet potato
- cherry tomatoes
- carrots, sliced to bite size
- fuji red apple, sliced to bite size
- olive oil (this is to keep veggies moist)
- zests of lime and lemon
- juice of half a lemon
- himalayan salt or sea salt
- freshly ground black pepper
- fresh dill, remove from main stems and finely chopped
- fresh rosemary, remove from woody stems and scissor thru to smaller segments
- dashes of the following for several layers of flavors: spanish paprika (sweet), smoked paprika (barbeque flavour), ground cinnamon (autumn spice, brings out sweetness), ground cumin (Indian/Mediterranean), Italian seasoning (adds to that herby layer of flavour), (Optional - Bragg's Organic Sea Kelp Delight Seasoning OR All Purpose Magic Salt-free Spike. These are if you want to avoid salt completely)
Baking Procedure:
Preheat oven to 370 degree F.
Mix all veggies in a wide and shallow baking dish. Toss it together with some olive oil to coat veggies and add a couple of dashes of all seasonings mentioned above and just a teensy bit of salt and black pepper.
Cover with foil and bake for about 15-30 mins. Test with a fork if the yams and sweet potatoes are soft and when they are, add the cherry tomatoes. Then leave uncovered for about another 15 mins or until you can smell the fragrant smell or until you can see a bit of golden colour on some of the veggies edges.
Stuffed Mushroom Ingredients:
- Medium to large sized Swiss brown mushrooms or portabella mushrooms, stems taken out
- 1 cup of Dark rich rice*, cooked/steamed
*I like to use F&C (Farm & Cottages Healthy Gourmet Organic) 'Forbidden Rice' which is just some dramatic name they call black rice. It is high in fiber and rich in iron. You can also use the Kalinga blended mountain rice bought in the organic Markets in Salcedo and Legaspi, Makati City. Even any organic brown/red rice readily available in the grocery shops will do. I personally feel better supporting the small farmer's income by buying brands like this plus they taste better. Bigger companies tend to use pesticides and hormones on animals.
- 2-3 tbsps of ground walnuts or any unsalted nut you like. I like walnuts as they are high in Omega-3.
- small red pepper, roasted & diced small
- 4 cloves of roasted garlic*for roasted garlic how-to's, click here
- ground smoked paprika, a couple of dashes
- 3-4 grilled cherry tomatoes (I stole them from the grilled veggies. This will make the stuffing stick together)
- some grated parmesan Cheese (or brewer's yeast for a Vegan version).
Mushroom Baking Procedure:
Mix all these together and stuff in with mushrooms and mold over the mushies high and tight so it does not easilly fall apart.
Spray or brush some olive oil on a cookie sheet and lay the mushrooms like cookies on the tray. Top each mushie with a bit of grated parmesan Cheese (or brewer's yeast for a vegan version).
Bake at same temp as the grilled veggies for about 15-20 mins or until the mushrooms start to somewhat shrink and caramelize. You'll know when it's done when it becomes fragrant. Keep an eye on this as you don't want to waste all that effort.
Now, plate together grilled veggies and stuffed mushrooms and you're ready to eat!
**This dish is good for Lacto-Vegetarians.
