Ingredients: 1 tbsp olive oil. 1 onion, diced. 2 cloves garlic, minced. 16 oz mushrooms, sliced. 1 cup chestnuts, peeled and chopped. 4 cups vegetable broth. 1 cup coconut milk. 1 tsp thyme, dried. Salt and pepper to taste. 1 tbsp nutritional yeast optional. Fresh chives for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add diced onion and saut until translucent. Stir in minced garlic, mushrooms, and chestnuts. Cook until mushrooms release their moisture. Pour in vegetable broth, coconut milk, and add thyme. Season with salt and pepper. Bring to a simmer. Reduce heat and let it simmer for 20-25 minutes, allowing flavors to meld. Optional: Stir in nutritional yeast for added creaminess and flavor. Use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches. Adjust seasoning if needed. Serve hot, garnished with fresh chives.
