RECIPE
Ingredients:
Cookies:
2 ½ cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
½ cup unsalted butter, softened
2 cups sugar
2 eggs
1 container (15 ounces) whole milk ricotta cheese
3 tablespoons orange juice
Zest from ½ of an orange
Glaze:
1 ½ cups powdered sugar
3 tablespoons orange juice
1 orange, zested
Steps:
1. Preheat oven to 375 degrees F.
2. In a medium bowl, combine flour, baking powder and salt. Set aside.
3. In a large bowl, combine butter and sugar using an electric mixer for 3 minutes or until light and fluffy. Add in eggs, one at a time, and beating until combined. Add in ricotta cheese, orange juice and zest. Beat to combine then stir in the dry ingredients.
4. Line two baking sheets with parchment paper. Spoon the dough, about 2 tablespoons each, into the baking sheet. Wet your fingers or a spoon, then use it to shape the cookies into a round shape or smooth the tops/edges.
5. Bake in preheated oven for 15 minutes. Then cool for at least 15 minutes prior to glazing.
6. Mix powdered sugar with orange juice and mix to a desired consistency. Then drizzle onto cooled cookies and garnish with orange zest.
