I want to bring this vegetable to your attention. I included it as a cooked dish in a previous post on Ding Tai Fung. It’s called bird’s nest fern. I had never heard of it or tasted it before. The tops kind of remind me of fiddlehead ferns. It seems to be the tender shoots of what we think of as an ornamental plant. Here in Taiwan it was foraged and commonly eaten by Aboriginal groups.
