So I just read this really interesting article about Sohla’s life pre-test kitchen, the restaurant she ran with her husband, and how racial inequalities in the cooking world have an impact on chefs of colour being able to cook ‘white food’.
Highly recommend giving it a read, it’s something I think you can see in the TK too, with people like Christina and Priya almost exclusively doing videos about their cultures' food, and a lot of comments are around them not making something ‘traditional’ or to an exact standard when they never claimed to represent all Indian or Korean culture. Then in turn, folk like Chris or Brad regularly make dishes from across the globe and aren’t critiqued in the same way, or when cooking American, French, or other European dishes are allowed to deviate from expectations or develop new alternatives without receiving the same sort of response
