Making a cranberry, mushroom and chestnut nut loaf
Making a delicious Brazil Nut and Mushroom Loaf.
This version wasn’t vegan but could be easily made so by swooping out the eggs for flax or chia eggs.
This is what I did:
-soaked a small packet of dried wild mushrooms in hot water whilst I prepared the rest of the ingredients. -sautéed one large finely diced red onion with two large cloves crushed garlic, dried rosemary and thyme, a finely diced fresh red chilli and a 200g punnet of finely sliced chestnut mushrooms in a splash or two of the delicious mushroom stock created by the soaked dried mushrooms. -whilst the veggies were softening, I roughly chopped 150g Brazil nuts and put them in a bowl with 250g leftover cooked mixed grains. I used a mix of quinoa, freekah, red rice and pearled barley but you could choose any leftover grain or cook up whatever you have in the cupboard. I then added four organic free range eggs (although next time I will be adding five as the loaf was slightly crumbly), the soaked wild mushrooms, chopped, sea salt and black pepper, fresh lemon juice and a little cinnamon and nutmeg and mixed it all together. - I then mixed the softened veggies into the bowl of nuts, eggs and grains and poured the mixture into a Pyrex baking dish which I had sprayed with coconut oil and baked at 200 Celsius for about 50 mins.
Let the nut loaf cool in the baking dish and then use a sharp knife to slice it however you like. I made this into eight portions but I would say it could be 6-10 portions depending what you choose to eat it with.
Note: I intended to add some dried cranberries to this nut loaf and although it is very nice without, I still feel it would be even better with them.
