Served with Parmesan cheese and fresh herbs, this salad is delicious and good for you. It has roasted broccoli or broccolini with lemon and garlic flavors. It's great as a side dish or a quick meal.
Ingredients: 1 lb fresh broccoli or broccolini. 2 tbsp olive oil. 2 cloves garlic, minced. 1 lemon, zest and juice. 1/4 cup grated Parmesan cheese. Salt and pepper to taste. 1/4 cup chopped fresh parsley. 1/4 cup toasted pine nuts optional. Red pepper flakes optional, for heat.
Instructions: Turn on your oven and heat it up to 425F 220C. Trim the broccoli or broccolini and cut it into florets that are easy to eat. Put the minced garlic, olive oil, lemon zest, and lemon juice in a large bowl. Toss the broccoli or broccolini florets in this mixture so that they are covered all over. Place the broccoli in a single layer on a baking sheet. Add pepper and salt to taste. Put the broccoli in an oven that has already been heated for 20 to 25 minutes, or until it is soft and the edges are starting to get a little crispy. To make sure they cook evenly, you might want to flip them once about halfway through the roasting. After taking the broccoli out of the oven, add grated Parmesan cheese on top of it. Use a light toss to cover the broccoli with the cheese. If you want, you can add chopped fresh parsley and toasted pine nuts as a garnish. If you like things really hot, add some red pepper flakes. Roasted Parmesan Lemon Garlic Broccoli or Broccolini Salad should be served right away. Have fun!
