Ingredients: 1 cup 2 sticks unsalted butter, browned and cooled. 1 cup granulated sugar. 1 cup packed brown sugar. 2 large eggs. 1 teaspoon vanilla extract. 3 cups all-purpose flour. 1 teaspoon baking soda. 1/2 teaspoon baking powder. 1/2 teaspoon salt. 1 cup chopped pecans. 1/2 cup chopped pecans for topping optional.
Instructions: Preheat your oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, mix the cooled browned butter, granulated sugar, and brown sugar until well combined. Add the eggs and vanilla extract to the butter-sugar mixture and mix until smooth. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in 1 cup of chopped pecans. Scoop about 2 tablespoons of dough and roll it into a ball. Place it on the prepared baking sheet. Repeat the process with the remaining dough, leaving enough space between each cookie. If desired, gently press some chopped pecans onto the top of each cookie for extra crunch. Bake the cookies in the preheated oven for 10-12 minutes or until the edges turn golden brown.
