A delightful burst of flavor comes from this pasta salad, which has nutty farro, tangy goat cheese, bright lemon, and fresh mint. You can eat it for lunch or as a side dish with any other meal.
Ingredients: 1 cup farro. Kosher salt and black pepper. 1 lemon, zest and juice. 3 tablespoons extra-virgin olive oil. 2 ounces goat cheese, crumbled. 1/4 cup fresh mint leaves, torn. 1/4 cup toasted pine nuts.
Instructions: Follow the directions on the package to cook the farro, and add a lot of salt to the water that you use. Mix lemon zest, lemon juice, and olive oil in a large bowl with a whisk. Add pepper and salt to taste. When the farro is done, drain it and add it to the bowl with the dressing. Toss to cover. When the farro is cool enough to touch, add the goat cheese crumbles, mint leaves torn into small pieces, and toasted pine nuts. Carefully toss to mix. Check the seasoning and make changes if needed. You can serve it at room temperature or cold.
