This Pasta Primavera is a quick and easy meal that's great for weeknights when you're busy. Everyone in the family will love this dish, which is made with lots of different colored vegetables and a tasty olive oil and garlic sauce.
Ingredients: 8 oz pasta. 2 tbsp olive oil. 2 cloves garlic, minced. 1 bell pepper, thinly sliced. 1 small zucchini, thinly sliced. 1 cup cherry tomatoes, halved. 1 cup broccoli florets. Salt and pepper to taste. 1/4 cup grated Parmesan cheese. 2 tbsp chopped fresh basil.
Instructions: Follow the directions on the package to cook the pasta. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. For about one minute, until the garlic smells good, add the minced garlic. Slice the bell pepper and zucchini and add them to the pan along with the broccoli and cherry tomatoes. It will take about 5 to 7 minutes of cooking until the vegetables are soft but still crisp. Add pepper and salt to taste. Toss the cooked pasta and vegetables together in the pan after adding them. The pasta should have grated Parmesan cheese and chopped fresh basil on top of it. Toss it again to spread it out evenly. Take it off the heat and serve right away, with extra Parmesan cheese and basil on top if you want.
