This roasted pumpkin and beetroot salad is a wholesome and delicious salad, topped with apple cider vinegar dressing and goats cheese.
Delicious. Goats cheese is really good in this - for some mild acidity. Tried with butternut squash too.
For beetroot - roasted whole in foil for 50 min with salt, then quartered then add to squash.
Great to eat cold. Tried to wilt spinach in warm squash and beetroot - probably good to have mix of wilted and fresh
