The history of cheesemaking globally, and in England, goes back far further than any written records, most likely stemming from the milk of domesticated sheeps, goats, or oxen/cows. In Cornley—though more recently known for their arts programs, such as the Cornley Drama Societies (CDS) and the Cornley Ballet Company (CBC)—the cheese produced is similar to that of Lymeswold, “a soft, mild blue cheese with an edible white rind”.¹ Like the CDS, the Cornley Brie is something that takes some getting used to before fully enjoying its rich flavour. In this manner, the way that Cornleyites have treated the Cornley Brie, culturally, is what has allowed the CDS to thrive, despite the obvious draw- and setbacks they have faced.
