Delicious stuffed round courgettes!

Nigerian stew in the oven? Every lazy cook's dream, biko! Zero oil and fall-off-the bone chicken for the win! ○ Blend peppers, tomatoes (my ratio of peppers to tomatoes- 3:1, I'm not a fan of tomatoes), habanero, onions and garlic. ○ Season chicken (be sure to stab it with a knife several times, and force that seasoning in!) with salt/adobo/maggi, rosemary, garlic, all spice (and whatever else you deem fit). ○ Pour pepper blend over chicken, mix and let sit in fridge overnight. ○ Bake covered at 400 degrees for 90 minutes. ○ If needed, add tomato paste to thicken.
