I never used to like stuffed peppers because the ones my grandma used to make were the green ones and even when I was a kid they gave me indigestion. She made them for me because I said I liked them and she wanted to please me (it’s never good to lie!). Anyway, it took me years to learn that red, yellow and orange peppers are much easier on my tummy. These are filled with quinoa, turkey and veggies. Feel free to use a different grain or veggies.
