These adorable vegan gluten-free owl cupcakes are perfect for Thanksgiving celebrations! They are moist, flavorful, and topped with cute owl decorations.
Ingredients: 1 1/2 cups gluten-free all-purpose flour. 1 cup almond milk. 1/2 cup unsweetened applesauce. 1/2 cup maple syrup. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. 1 teaspoon apple cider vinegar. 1/2 teaspoon baking powder. 1/2 teaspoon baking soda. 1/4 teaspoon salt. Vegan chocolate chips or raisins for eyes. Vegan chocolate frosting. Sliced almonds for wings. Vegan candy or fruit slices for beak and feet.
Instructions: Preheat the oven to 350F 175C and line a cupcake tin with liners. In a mixing bowl, whisk together almond milk, applesauce, maple syrup, melted coconut oil, vanilla extract, and apple cider vinegar. In another bowl, sift together gluten-free flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until well combined and smooth. Fill each cupcake liner about 2/3 full with batter. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely before decorating. Once cooled, frost the cupcakes with vegan chocolate frosting. Place two vegan chocolate chips or raisins on each cupcake for the owl's eyes. Insert two sliced almonds on the top sides of each cupcake for the wings. Using vegan candy or fruit slices, create a small triangle for the beak and two small pieces for the feet. Serve and enjoy!
