A delicious and moist Paleo-friendly coffee cake with a sweet cinnamon topping, perfect for breakfast or as a snack with your favorite cup of coffee.
Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1/4 cup arrowroot flour. 1/2 cup coconut sugar. 2 teaspoons ground cinnamon. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 3 large eggs. 1/3 cup coconut oil, melted. 1/4 cup unsweetened almond milk. 1 teaspoon vanilla extract. 1 tablespoon apple cider vinegar.
Instructions: Preheat the oven to 350F 175C. Grease an 8-inch square baking dish with coconut oil. In a large bowl, combine almond flour, coconut flour, arrowroot flour, coconut sugar, cinnamon, baking soda, and salt. In another bowl, whisk together eggs, melted coconut oil, almond milk, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until well combined. Add apple cider vinegar to the batter and mix well. Pour the batter into the prepared baking dish and spread it evenly. In a small bowl, mix together 2 tablespoons of coconut sugar and 1 teaspoon of cinnamon. Sprinkle this mixture evenly over the batter in the baking dish. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow the coffee cake to cool before slicing and serving.
