@glumshoe This physically hurt to draw and I hope you're proud of the puns that ensued from your "dinosaur wrist discourse" post because it's too late to undraw this. Go dig up the shotgun I buried under the shed in 1988, because it's escaped and is on the loose and it's you're responsibility now, since, by the time you read this, I'm very likely dead. (Especially considering I only have half a clue what I'm talking about. How do you heckers read a webcomic that's literally thousands of pages long? Especially those of you who weren't following updates real-time. What the hell.)
paleo-ish chocolate chip cookies
you guys i just made the BEST chocolate chip cookies!!
ok here’s what you need
2 eggs
1 cup almond butter (or another nut butter of choice)
1/2 cup almond flour
2 tbsp grass fed salted butter melted (i use the kerrygold - this is the paleo-ish part)
1 tsp vanilla extract
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon (i liked a lot and just shook it in)
chocolate chips (i had semi-sweet ones from trader joes so that is what i used)
1/8 cup honey
1/8 cup maple syrup (if you want sweeter use all honey and a little trick if you are doing both. Use a 1/4 cup and put the maple syrup in first, then the honey into the same cup and just eyeball it. the maple syrup doesn’t stick to the cup like honey does and it will come out way easier!)
1/2 tsp salt
preheat oven to 350 rack in the center. mix all ingredients, except chocolate chips with either a stand or hand mixer (or work those biceps). The mix will be sticky. then fold in the chocolate chips. there are a few choose your adventure points in this. You could sub out the butter for coconut oil. You could use more or less salt, more or less honey/maple syrup. I like a less sweet, a little more salt buttery cookie (hence the maple syrup and butter). I also am notorious for using too many chocolate chips (i restrained myself this time).
place in 350 degree oven for 12-15 min or until just starting to turn golden on top. this made me about 24 (including some of the dough i ate - because chocolate chip cookie dough is awesome).

Alright. Almost a week in.
Excited for weigh in on Sunday. Sort of. Because I hate weighing myself. Like...LITERALLY FUCKING HATE. Other than that, I have officially signed up for the gym so I’ll start the running portion of my journey tomorrow. Yay? I dunno. My goal is to be 5k ready for spring. Here’s hoping. I also bought some Jillian Michaels thing to work on cross training so I don’t die from running so much. I used to be a runner so I know things (HAH yeah. It’s been a minute. Like 10 years. Meh. Details) How is everyone else doing on their new years health resolutions?
Whew.
Life has finally started to calm down a bit! I’ve been busting my ass painting and cleaning this house (which was pretty much left a mess) and things are FINALLY starting to come together. I still have quite the to-do list, but we have our bedroom and kitchen mostly organized!
Saturday before we headed back east for our family’s easter celebrations, Matt and I made 12 paleo freezer meals. We still had 3 left from the last time too! We also have an Aldi near us, so we stocked up on lots of turkey breast. Our fridge and freezer are both stocked with healthy food, and I’m excited to get back on track. I’m going to be aiming to be mostly paleo again, because in my experience it has worked best for me.
This morning I weighed myself for the first time in months. I was pleasantly surprised to learn that I’ve been maintaining. It’s still close to my starting weight from 3 years ago, but I’m not above it! So, for accountability:
Most of our workout equipment is living in my sister’s garage.. It wouldn’t fit in our truck. BUT, we do have the wii workout games and my mom’s old bowflex weight bench. So, for now those will have to do until we get our elliptical back. Matt has agreed to buy a treadmill too, but I think we are gonna wait and see what bills are gonna be like and such.
Anywho. I’ve started this morning off with a BLT egg salad and some melon. I forgot that I was doing paleo and Matt left out the coffee creamer, so I accidentally added some. But, paleo-ish works for me too. :)
& with that, I’m off to work on my house some more. I’m excited to be back and see how you all have been doing!
Mince pies optimised
The average mince pie is quite a sugary experience. Fortunately, it doesn’t have to be like that. I’ve discovered that dried fruit is sweet enough by itself, especially when combined with almond pastry that seems to have its own milky-sweet flavour.
