Ingredients: 4 boneless ribeye steaks about 1.5 pounds each. 2 tablespoons olive oil. Salt and pepper to taste. For the Chimichurri Sauce:. 1 cup fresh parsley leaves, chopped. 1/2 cup fresh cilantro leaves, chopped. 4 cloves garlic, minced. 1/4 cup red wine vinegar. 1/4 cup extra virgin olive oil. 1 teaspoon red pepper flakes. Salt and pepper to taste.
Instructions: Preheat your grill to high heat, about 450F 230C. Brush the steaks with olive oil and season generously with salt and pepper on both sides. Place the steaks on the grill and cook for 4-5 minutes per side for medium-rare, or longer for desired doneness. While the steaks are grilling, prepare the chimichurri sauce. In a bowl, combine chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper. Mix well.
