Ingredients: 1 1/2 cups almond flour. 1/4 cup coconut flour. 1/2 cup pumpkin puree. 1/4 cup maple syrup. 3 eggs. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. 1 teaspoon baking soda. 1/2 teaspoon ground cinnamon. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground ginger. Pinch of salt. Optional: chopped nuts or seeds for topping.
Instructions: Preheat the oven to 350F 175C. Grease a loaf pan or line with parchment paper. In a large bowl, whisk together the almond flour, coconut flour, baking soda, cinnamon, nutmeg, ginger, and salt. In another bowl, mix the pumpkin puree, maple syrup, eggs, melted coconut oil, and vanilla extract until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Pour the batter into the prepared loaf pan, smoothing the top with a spatula. If desired, sprinkle chopped nuts or seeds on top of the batter. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
