Ingredients: 2 cups almond flour. 1/4 cup coconut flour. 1 tsp baking soda. 1/4 tsp salt. 1 tsp cinnamon. 1/2 tsp nutmeg. 3 large eggs. 1/4 cup honey. 1/4 cup melted coconut oil. 1 tsp vanilla extract. 2 medium apples, peeled and diced. 1/2 cup chopped pecans or walnuts. 1/2 cup coconut sugar. 1/4 cup full-fat coconut milk. 1 tbsp coconut oil.
Instructions: Set oven temperature to 175C 350F. Butter a 9-inch circular cake pan. Almond flour, coconut flour, baking soda, salt, cinnamon, and nutmeg should all be combined in a big bowl. Whisk eggs, honey, melted coconut oil, and vanilla extract in a separate bowl. Stirring until thoroughly blended, gradually add the wet ingredients to the dry ingredients. Add chopped nuts and diced apples and mix well. After the cake pan is ready, pour the batter into it and spread it evenly. When a toothpick inserted into the center comes out clean, bake for 25 to 30 minutes. Make the caramel sauce while the cake bakes. Heat coconut oil, coconut milk, and coconut sugar in a saucepan over medium heat. Simmer the mixture, stirring constantly, for 5 to 7 minutes, or until the sugar is completely dissolved and the sauce starts to thicken. When the cake is done, take it out of the oven and give it ten minutes to cool. Before serving, drizzle the cake with the warm caramel sauce.
