Fresh Pandan Coconut Cake

Coconut Pandan Tea Cake

2 cups all-purpose flour (a GF all-purpose flour blend will work) 1/2 cup almond meal 1 cup organic cane sugar 1 tbsp pure pandan leaf powder 2 tsp baking powder 1 tsp sea salt 2 cups coconut kefir (or vegan buttermilk) 2/3 cup grape seed oil (or vegetable oil) 1 tsp pandan extract 1 cup coconut flakes Preheat oven to 350 degrees F. Grease a bundt pan with coconut oil. In a large glass mixing bowl, sift together the; all-purpose flour, almond meal, cane sugar, pandan leaf powder, baking powder, and sea salt. In a separate mixing bowl, whisk together the; coconut kefir, grape seed oil and pandan extract. Add the wet ingredients to the dry ingredients and stir to combine. Fold in the coconut flakes. Pour batter into prepared pan. Bake in preheated oven for 45 minutes. Allow to cool completely in pan before flipping out onto a serving platter. Using a sifter, sprinkle some icing sugar over top. Slice and serve, as is, or with a dollop of coco cool whip or vegan vanilla ice cream.

While at the Ang Mo Kio hawker centre, I chanced upon a bake stall selling buns, cakes and pastries. Picked a couple each of the Baked Bun/Siew Pau (烧包), Walnut Pastry (核桃酥) and Salted Egg Yolk Pastry (咸蛋黄酥). The Walnut Pastry (S$1.40) had nice buttery pastry filled with sweet lotus seed paste and whole walnuts embedded on both sides. The nuts are so darn crunchy! Yummm….

The Siew Pau (S$1.20) is moist and savoury sweet, best eaten on the day of purchase as it does get a little soggy due to the juicy meat filling inside. My sis and I love the combination of sweet (lotus seed paste) and salty (egg yolk) flavours from the Salted Egg Yolk Pastry (S$1.50). They complement rather than overpowered each other on the taste buds.

And now for the not so good review of the Pandan Cake (S$4 for a block). The cake itself had moderately fragrant pandan 🌿 aroma with the first bite. The texture is rather dry and rough, not the silky kind I expected of it. I had to wash it all down quickly with the milk tea. Definitely would not buy this again.
