Ingredients: 2 cups gluten-free all-purpose flour. 1 1/2 tsp gluten-free baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp pure vanilla extract. 1 cup buttermilk. 1/3 cup rainbow sprinkles gluten-free. For Vanilla Buttercream Frosting:. 1 cup unsalted butter, softened. 4 cups powdered sugar. 1/4 cup milk. 1 tsp pure vanilla extract. Additional rainbow sprinkles for decoration.
Instructions: Start by heating the oven to 350F 175C. Prepare two 8-inch round cake pans by greasing them and lining them with parchment paper. Mix the baking powder, baking soda, salt, and gluten-free flour in a bowl with a whisk. Put away. Put the softened butter and granulated sugar in a different large bowl and mix them together until they are light and fluffy. One at a time, add the eggs and beat well after each one. Add the vanilla extract and mix well. Slowly add the dry flour mixture to the wet ingredients, mixing it in with the buttermilk every so often. Start with the dry ingredients and end with the buttermilk. Don't mix any further than that. Add the rainbow sprinkles slowly while mixing them in until they are spread out evenly. Place an equal amount of batter in each of the cake pans that have been prepared, and smooth the tops. After the oven is hot, bake the cakes for 25 to 30 minutes, or until a toothpick stuck in the middle comes out clean. The cakes should cool in the pans for 10 minutes. After that, they should be taken out and put on a wire rack to cool completely. To make the Vanilla Buttercream Frosting, soften the butter and beat it in a bowl until it is smooth and creamy. Add the powdered sugar, milk, and vanilla extract one cup at a time while beating the frosting until it is light and fluffy. Put some frosting on top of one of the cakes after it has cooled all the way down. Top with the second cake and frost the top and sides of the whole thing. If you want, you can decorate the cake with more rainbow sprinkles. Enjoy your tasty gluten-free funfetti birthday cake with vanilla buttercream frosting after you cut it up and serve it.
