[First year and a half, it was just dessert. But we added croissants and sandwiches, and we kept putting it in the pastry case. MAN: Everything in the case looks delicious. It's just, uh, I'll take that today.]
Baking Tip: Rosemary Pastry
The reason I always have pastry in the freezer is that, when the end of the week comes, you’re knackered and the fridge is close to empty; you can always make dinner if you have pastry and cheese. Or pastry and a few vegs (and cheese! Cheese makes everything better!) And this Rosemary Pastry makes any tart or pie a bit special, too, with his fragrant flavour. It can even make your Friday dinner a party!
Ingredients (375 grams/13 ounces):
2 cups plain flour
1/2 teaspoon salt
1 fluffy sprig fresh rosemary
75 grams/2.65 ounces unsalted butter, cut into small chunks
1/2 cup ice water
In a large bowl, combine flour and salt. Give a good stir. Remove rosemary leaves from the sprig, and finely chop them. Stir chopped rosemary into the flour. Rub cold butter into flour mixture between your fingers until mixture resembles coarse meal. Gradually add ice water, stirring ingredients with your hand until a soft dough ball forms. Knead lightly a couple of minutes. Flatten into a disc.
Wrap tightly in cling film, and chill in the refrigerator at least an hour before using.
If not using then, place wrapped Rosemary Pastry in a zip-lock bag and freeze, up to 3 months. Remove from the freezer a couple of hours before you need to use it, and allow to thaw at room temperature.

It’s so expected for people to grab doughnuts and pastries from the case without using the tissue or letting their kids get too close where they want to touch everything in the case that we now have to individually wrap each pastry item that goes into the pastry case. Unfortunately, we’re going to use up so much plastic, during this whole thing.
*Use green bags when you shop. Also, saw an article noting that you should rinse/wash your green bags when possible.
*It took me 3-4 hours to fill the doughnut case because of the added step. I get that people need stress food, but this is ridiculous.
