These adorable decorated peach cookies will delight your taste buds! The combination of a buttery cookie base, fresh peaches, and a sweet glaze makes this the ideal treat for any occasion.
Ingredients: 2 cups all-purpose flour. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 1/4 teaspoon salt. 1/2 cup finely chopped peaches. 1 cup powdered sugar. 2-3 tablespoons milk. Food coloring optional. Edible decorations sprinkles, edible glitter, etc..
Instructions: In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined. Gradually add the flour and salt to the wet ingredients, mixing until a dough forms. Gently fold in the finely chopped peaches. Wrap the dough in plastic wrap and refrigerate for at least 1 hour. Preheat the oven to 350F 175C and line a baking sheet with parchment paper. Roll out the chilled dough on a lightly floured surface to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes and place them on the prepared baking sheet. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely. In a small bowl, whisk together the powdered sugar and milk to create a smooth glaze. Add food coloring if desired. Once the cookies are completely cool, spread or drizzle the glaze over the cookies. While the glaze is still wet, decorate the cookies with edible decorations of your choice. Allow the glaze to set before serving or storing the cookies.
