Thighs and drumsticks of chicken marinated in a spicy peri-peri sauce and then baked until they are cooked through. This recipe is great for a quick and easy dinner during the week.
Ingredients: 4 chicken thighs. 4 chicken drumsticks. 1/4 cup peri peri sauce. 2 tablespoons olive oil. 2 cloves garlic, minced. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. Salt and pepper to taste.
Instructions: In a bowl, mix peri peri sauce, olive oil, minced garlic, paprika, cayenne pepper, salt, and pepper. Add chicken thighs and drumsticks to the bowl, making sure they are well coated with the marinade. Cover and refrigerate for at least 1 hour, or overnight for best results. Preheat oven to 400F 200C. Place marinated chicken on a baking tray lined with parchment paper. Bake in the preheated oven for 35-40 minutes, or until chicken is cooked through and juices run clear, turning once halfway through cooking. Serve hot, garnished with fresh herbs if desired.
