Ingredients: 1 cup peanut butter. 1/2 cup honey. 2 cups rolled oats. 1 cup crispy rice cereal. 1/4 cup mini chocolate chips. 1/4 cup chopped peanuts. 1 teaspoon vanilla extract. 1/4 teaspoon salt.
Instructions: Line a 9x9-inch baking pan with parchment paper. In a large microwave-safe bowl, combine peanut butter and honey. Microwave on high for 30 seconds and stir until smooth. Add rolled oats, crispy rice cereal, mini chocolate chips, chopped peanuts, vanilla extract, and salt to the peanut butter mixture. Stir until all ingredients are well combined. Transfer the mixture to the prepared baking pan. Use a spatula to press the mixture firmly and evenly into the pan. Refrigerate the mixture for at least 2 hours to set. Once set, remove the granola mixture from the pan and cut into bars. Store the peanut butter granola bars in an airtight container at room temperature or in the refrigerator for up to one week.
