Ingredients: 2 cups all-purpose flour. 1/2 teaspoon baking powder. 1/4 teaspoon salt. 1 cup unsalted butter, softened. 1 cup granulated sugar. 1 large egg. 1 teaspoon vanilla extract. 1/2 teaspoon almond extract. 1/4 teaspoon ground nutmeg. 1/4 teaspoon ground cinnamon. 1/2 cup finely chopped pecans. 1/2 cup dried cranberries.
Instructions: In a medium bowl, whisk together flour, baking powder, and salt. In a large mixing bowl, cream the softened butter and sugar until light and fluffy. Beat in the egg, vanilla extract, almond extract, nutmeg, and cinnamon until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chopped pecans and dried cranberries. Divide the dough into two equal parts and shape each into a log about 2 inches in diameter. Wrap the logs in plastic wrap and refrigerate for at least 2 hours or until firm. Preheat the oven to 350F 175C and line baking sheets with parchment paper. Slice the chilled dough logs into 1/4-inch thick rounds and place them on the prepared baking sheets. Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes. Transfer the cookies to wire racks and let them cool completely.
