Delicious gluten-free gingerbread cookies that come in both classic gingerbread men shapes and cute ginger cats shapes, perfect for holiday baking and enjoyment.
Ingredients: 2 cups gluten-free all-purpose flour. 1/2 teaspoon baking soda. 1/4 teaspoon salt. 1 teaspoon ground ginger. 1 teaspoon ground cinnamon. 1/4 teaspoon ground cloves. 1/4 teaspoon ground nutmeg. 1/2 cup unsalted butter, softened. 1/2 cup brown sugar, packed. 1/4 cup molasses. 1 large egg. 1 teaspoon vanilla extract. Icing:. 1 cup powdered sugar. 1-2 tablespoons milk. Food coloring optional.
Instructions: There is gluten-free flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg in a medium bowl. Mix them together with a whisk. Spread the softened butter and brown sugar out in a separate large bowl. Beat them together until they are light and fluffy. Mix the molasses, egg, and vanilla extract into the butter mixture until everything is well mixed together. Mix the dry ingredients into the wet ingredients one at a time until a dough forms. Make two discs out of the dough, flatten each one, wrap each one in plastic wrap, and put them in the fridge for at least two hours. Warm your oven up to 350F 175C and put parchment paper on a baking sheet. With a little flour on the work surface, roll out one disc of dough to about 1/4 inch thick. Use cookie cutters in the shape of gingerbread men and cats to make shapes, then move them to the baking sheet that has been laid out. Do it again with the other dough disc. For 10 to 12 minutes, or until the edges are just beginning to brown, bake the cookies. Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way. In a small bowl, mix powdered sugar and milk with a whisk until the spread is smooth. If you want, you can add food coloring. While the cookies are still cool, use a piping bag or a small spoon to decorate them with the icing. Before you serve or store the cookies, let the frosting set.
