Put yourself in the holiday spirit with these delectable Christmas Hot Cocoa Cookies! Mini marshmallows, chocolate chips, and crushed candy canes add a hint of peppermint to these chocolatey cookies. Ideal for relaxing by the fire with a cup of hot cocoa.
Ingredients: 1 cup butter, softened. 1 cup granulated sugar. 2 large eggs. 1 teaspoon vanilla extract. 2 cups all-purpose flour. 2/3 cup cocoa powder. 1 teaspoon baking soda. 1/2 teaspoon salt. 1/4 teaspoon ground cinnamon. 1/2 cup mini marshmallows. 1/2 cup chocolate chips. 1/2 cup crushed candy canes.
Instructions: Preheat the oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs and vanilla extract to the butter mixture, and beat well to combine. In a separate bowl, whisk together the flour, cocoa powder, baking soda, salt, and ground cinnamon. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the mini marshmallows, chocolate chips, and crushed candy canes. Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet. Bake in the preheated oven for about 10-12 minutes, or until the cookies are set around the edges. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
