Ingredients: 2 lbs beef stew meat, cubed. 2 tbsp olive oil. 1 onion, chopped. 3 cloves garlic, minced. 3 carrots, peeled and sliced. 2 celery stalks, chopped. 1 cup Cabernet Sauvignon wine. 2 cups beef broth. 1 can diced tomatoes. 2 bay leaves. 1 tsp dried thyme. Salt and pepper to taste. Fresh parsley for garnish.
Instructions: In a large pot, heat olive oil over medium heat. Add beef stew meat and cook until browned on all sides. Remove beef from the pot and set aside. In the same pot, add chopped onion and garlic. Cook until softened. Stir in carrots and celery, cook for another 3-4 minutes. Return beef to the pot. Pour in Cabernet Sauvignon wine, beef broth, and diced tomatoes. Add bay leaves and thyme. Season with salt and pepper. Bring to a simmer, then reduce heat to low.
