Enjoy these delicious homemade fortune cookies for Chinese New Year. These cookies are crispy on the outside and tender on the inside, with personalized messages intended to bring good fortune and joy to those who receive them.
Ingredients: 2 large egg whites. 1/2 cup granulated sugar. 1/2 cup unsalted butter, melted. 1 teaspoon vanilla extract. 1/4 teaspoon almond extract. 1 cup all-purpose flour. 2 tablespoons water. 1 pinch salt. Fortune slips with messages written on them.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Whisk the egg whites in a bowl until they get foamy. Blend the butter and sugar together, then add the almond and vanilla extracts. Combine well. Add the flour, water, and salt to the mixture little by little. Mix until it's smooth. Put one tablespoon of the batter on the baking sheet that has been prepared. Spread it out into a thin circle that is about 4 inches across with the back of a spoon. When the edges start to turn golden brown, the cookies are done. Take the baking sheet out of the oven and quickly put a fortune cookie in the middle of each one. To make the shape of a fortune cookie, fold the cookies in half and then gently bend the edges down over the edge of a cup or mug. Let the cookies cool and harden in the mug or cup before moving them to a wire rack to cool all the way down. Do it again with the rest of the batter and fortune cookies. When the cookies are completely cool, put them in a container that won't let air in. This will keep them crisp and fresh. Enjoy your homemade fortune cookies while you celebrate the New Year!
