The flavors and textures of these Pickled Beetroot Burgers go well together. This burger is different because it has pickled beets on it, and the mayo-Dijon sauce makes it all go together. Great for a night of gourmet burgers!
Ingredients: 4 beef burger patties. 4 burger buns. 1 cup pickled beetroot slices. 1/2 cup arugula leaves. 4 slices of cheddar cheese. 1/4 cup mayonnaise. 2 tablespoons Dijon mustard. 1 small red onion, thinly sliced. Salt and pepper to taste. Olive oil for cooking.
Instructions: Set your grill or griddle on the stove to medium-high heat to get it ready. On both sides, season the beef patties with salt and pepper. Put the burger buns on the grill and brush them with olive oil. Let them cook until they're just barely browned. Put them away. Put the beef patties on the grill and cook them for four to five minutes on each side for medium-rare. If you like your burgers more done, cook them for longer. Add a slice of cheddar cheese to each patty and let it melt in the last minute of cooking. A small bowl with mayonnaise and Dijon mustard should be used to mix them while the patties are cooking. Put some of this sauce on the bottom half of each toasted bun. Put a beef patty with melted cheese on each bottom bun to make the burgers. Put pickled beet slices, red onion slices, and arugula leaves on top. Add the top bun last, and if necessary, use toothpicks to hold the burgers together. As a side dish, serve your hot pickled beetroot burgers.
