The colorful crunch of various candies and the sweetness of mini marshmallows come together in these adorable Mini Marshmallow and Candy Cupcakes. Ideal for sweet snacks or parties!
Ingredients: 1 1/2 cups all-purpose flour. 1 1/2 tsp baking powder. 1/2 tsp salt. 1/2 cup unsalted butter, softened. 1 cup granulated sugar. 2 large eggs. 1 tsp vanilla extract. 1/2 cup whole milk. 1 cup mini marshmallows. 1/2 cup assorted colorful candy e.g., M&M's or sprinkles.
Instructions: Set a muffin tin with cupcake liners and preheat the oven to 350 degrees Fahrenheit 175 degrees Celsius. Mix the flour, baking powder, and salt in a mixing bowl. Put aside. Beat the softened butter and granulated sugar in a separate bowl until they become light and fluffy. One egg at a time, beat in, and then mix in the vanilla extract. Add the dry ingredients to the wet mixture gradually, starting and ending with the dry ingredients and alternating with the milk. Blend until barely combined. Add the colorful candy and mini marshmallows and fold gently. Load the muffin tin with cupcake batter, filling each cup to about two thirds of the way to the top. When a toothpick is inserted into the center of a cupcake, it should come out clean after 18 to 20 minutes of baking in a preheated oven. After taking the cupcakes out of the oven, let them cool for a few minutes in the muffin tin before moving them to a wire rack to finish cooling.
