I love good Champagne and yes there is a huge difference between bad-good-great-amazing Champagnes. Allow me to introduce you to Pierre Gimonnet & Fils Champagne Traditional Cuvées, 1er Cru, Brut 'Selection Belles Annees Blancs de Blancs, (NV) from the Champagne region of Burgundy, Côte des Blancs. With only 28 hectares of vineyards owned, 98% are Chardonnay and 2% Pinot Noir. The Gimonnet house has yearly production of 20,000 cases. Didier Gimonnet is the 2nd generation of growers to run this estate. The winery is in the premier cru village of Cuis where the Gimonnet’s have been growing grapes since 1750. Pierre Gimonnet, Dider’s Grandfather, started bottling estate champagnes in 1935. Many of their vines are almost 50 years old and some over 100 years old. As with all top Champagnes, extreme care is taken with the harvesting and vinification of the grapes. Many steps are taken to prevent premature damage and oxidation of the grapes then they are gently pressed and the musts are cooled for clarification. Once the sediment has settled the musts are racked and fermentations begins. Every vineyard parcel is vinified separately, providing a wide range of wines from which to create the ideal blend. Malolactic fermentation then takes place, creating intense aromas and flavors and improving the longevity. After bottling and the addition of the tirage bottles are aged for 18 to 24 months for NV Champagne . Remuage or bottle turning is done manually. Disgorging takes place 3 to 6 months before the wine is sold. The dosage is at a low percentage derived from the estates older wines, so the true "blanc de blancs" characteristics are maintained. The "Cuis 1er Cru" is the only Gimonnet Champagne to include the last wine from the press which adds fruitiness of the wine, while maintaining finesse. The nose is expressive of rich fruit of pears and creamy vanilla.
