We have decided that we like pikelets in this household.  I am going to look for rings, now, because that means we like crumpets, too.

A surprisingly easy recipe (though I used water, and not stale beer, as Mike did here), and a really interesting cross between classic American pancakes and straight-up bread.  Especially with loads of butter and honey (which, to be fair, would make just about anything taste amazing).
