Ingredients: 1 vegan pie crust. 1 can 20 oz crushed pineapple, drained. 1/2 cup coconut sugar. 1/4 cup cornstarch. 1/4 cup coconut oil, melted. 1 teaspoon vanilla extract. 1/2 teaspoon cinnamon. Pinch of salt.
Instructions: Preheat the oven to 350F 175C. In a bowl, mix together drained crushed pineapple, coconut sugar, cornstarch, melted coconut oil, vanilla extract, cinnamon, and a pinch of salt until well combined. Pour the pineapple mixture into the vegan pie crust, spreading it out evenly. Bake in the preheated oven for 35-40 minutes, or until the filling is set and the crust is golden brown. Remove from the oven and let it cool completely before slicing. Serve chilled or at room temperature, optionally topped with vegan whipped cream or coconut yogurt.
