A tasty take on the traditional General Tso's Chicken recipe that boosts flavor with chunks of sweet, tangy pineapple. This dish has the ideal ratio of sweet to spicy thanks to the combination of crispy chicken, vibrant bell peppers, and a tasty sauce.
Ingredients: 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces. 1/2 cup cornstarch. 2 tablespoons vegetable oil. 1 red bell pepper, sliced. 1 green bell pepper, sliced. 1 cup pineapple chunks. 3 cloves garlic, minced. 1/2 teaspoon ginger, minced. 1/4 cup soy sauce. 1/4 cup hoisin sauce. 2 tablespoons rice vinegar. 2 tablespoons brown sugar. 1/4 teaspoon red pepper flakes adjust to taste. Green onions, chopped, for garnish. Cooked rice, for serving.
Instructions: Shake off excess cornstarch after applying the coating to the chicken pieces in a bowl. In a large skillet or wok, heat the vegetable oil over medium-high heat. When golden and crispy, add the coated chicken pieces and continue to cook. Take out and place aside. If necessary, add a little more oil to the same skillet and add the minced ginger and garlic. Stir-fry until fragrant, about 30 seconds. Add the pineapple chunks and the sliced bell peppers. Stir-fry for two to three minutes or until softened slightly. Combine the soy sauce, hoisin sauce, rice vinegar, brown sugar, and red pepper flakes in a small bowl. Over the vegetables and pineapple in the skillet, pour the sauce. Back in the skillet, add the cooked chicken. Cook, stirring, for a further two to three minutes, or until the sauce thickens and covers everything equally. Garnish with chopped green onions and serve hot over cooked rice. Savor your homemade pineapple-garlic Tso's chicken!
