Pan-fried country ribs (basically I give them the cutlet treatment) is one of my favorite Sunday night accompaniments to pasta, and this is a post mainly to advocate using some pink lemons if you find them in the store as we enter into the best of citrus season. I thought that they were some hybrid of lemons and grapefruit, because I detected some grapefruit flavors, but according to FN Dish they came about from a spontaneous mutation and were discovered back in 1930.
I buy them by the bag at my local Harris Teeter, so if you have your own Kroger/Kroger sub-brand near you, chances are decent you might be able to find them too. They don’t make pink lemon juice, but in every other way they are such pretty little citrus gems.
