Un-Bread
(Purely Twins' Grain-free Plantain Bread, Veganized)
Avoiding carbs is hard for me, and not exactly a successful endeavor. This is a nice alternative and I love using new combinations of ingredients for "traditional" foods. Bread made from plantains was an intriguing concept -- once I read the recipe on Purely Twins' website, I knew I was going to make it. Not only is it easy to prepare but requires only two ingredients! However, I came home and saw I was out of eggs, so I improvised and whipped up flax eggs instead. The result was sweet but surprisingly bread-like. It went great with peanut butter.
Here's my slightly amended version:
Ingredients:
One plantain, peeled and chopped into chunks
Two tablespoons of ground flax seed
Four tablespoons of water
Preheat the oven at 350 degrees. Mix the ground flax seed with water in a cup or small bowl. Let it sit for a few minutes - it should get "goopy" (voila, flax eggs!) Add flax eggs and plantain into a blender until smooth. Pour the mixture into a greased pan and then bake in the oven for 20 minutes. Let it cool completely before slicing and serving.
