These Cherry Chocolate Chip Granola Bars are a delightful gluten-free and vegan treat. Packed with the goodness of oats, dried cherries, dairy-free chocolate chips, and almond butter, they are a perfect snack for any time of day.
Ingredients: 2 cups gluten-free rolled oats. 1/2 cup unsweetened shredded coconut. 1/2 cup almond butter. 1/3 cup maple syrup. 1/4 cup dairy-free chocolate chips. 1/4 cup dried cherries. 1/4 cup chopped almonds. 1/4 cup flaxseed meal. 1/2 tsp vanilla extract. 1/4 tsp salt.
Instructions: Set the oven to 350 degrees Fahrenheit 175 degrees Celsius and line an 8 by 8-inch 20 by 20 centimeter baking pan with parchment paper, leaving a small overhang for simple removal. The dairy-free chocolate chips, flaxseed meal, chopped almonds, dried cherries, unsweetened shredded coconut, and gluten-free rolled oats should all be combined in a big mixing bowl. Heat the almond butter and maple syrup in a small saucepan over low heat, stirring to mix well. Add a small pinch of salt and stir in the vanilla extract. After adding the wet mixture to the dry ingredients, stir everything to ensure that it is all coated. Using a spatula or the back of a spoon, transfer the mixture to the baking pan and press it down firmly. Bake for 20 to 25 minutes, or until the edges begin to brown slightly, in a preheated oven. Take it out of the oven and allow it to cool for ten minutes or so in the pan. After that, remove the bars from the pan using the overhanging parchment paper, and let them cool fully on a cooling rack. Cut the bars into the size and shape you want after they have cooled. Savor the Cherry Chocolate Chip Granola Bars that you made yourself!
