Hunter's Chicken Pollo alla Cacciatora is a rustic Italian dish featuring tender chicken simmered in a flavorful tomato and wine sauce, accented with aromatic herbs and olives. This dish is hearty, comforting, and perfect for a satisfying dinner.
Ingredients: 4 chicken thighs. Salt and pepper to taste. 2 tablespoons olive oil. 1 onion, chopped. 2 cloves garlic, minced. 1 bell pepper, sliced. 1 can 14 oz diced tomatoes. 1/2 cup chicken broth. 1/4 cup red wine. 1 teaspoon dried oregano. 1 teaspoon dried thyme. 1/2 teaspoon dried rosemary. 1 bay leaf. 1/4 cup black olives, pitted. 2 tablespoons chopped fresh parsley.
Instructions: Season chicken thighs with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add chicken thighs and cook until browned on both sides, about 5 minutes per side. Remove from skillet and set aside. In the same skillet, add chopped onion, minced garlic, and sliced bell pepper. Cook until softened, about 5 minutes. Stir in diced tomatoes, chicken broth, red wine, dried oregano, dried thyme, dried rosemary, and bay leaf. Bring to a simmer. Return chicken thighs to the skillet. Cover and simmer for 25-30 minutes, until chicken is cooked through. Stir in black olives and chopped parsley. Cook for an additional 5 minutes. Serve hot, garnished with additional parsley if desired.
