Frugal food fave - using leftover roast lamb or mutton, vegie offcuts, pulses and grains to make a hearty sustainable meal. Some of the people I was raised by had known scarcity or starvation early in their lives. They imbued me with a reverence and gratitude that sees me resolved to waste as little as possible. This is a soup concept I knew from childhood. You take the bone from your roast and simmer it submerged in a saucepan of water with a bayleaf and (optional) peppercorns. This is your broth. In a separate pot I fry to softened an offcut mirepoix (a mixture of sautéed chopped vegetables). Today's contained fennel stems, a wizened parsnip, half an onion and half of an old broken carrot. I covered that with some of the broth plus extra water and added another bay leaf, a handful of barley, 3 kinds of lentils, dried peas and some dried chickpeas I keep soaking in a jar in the fridge for whenever I fancy using them. You could use a dried mix in a packet, but I find it cheaper and more flexible to have a small stockpile of these individually. This simmered it until all dried ingredients were cooked through and swollen, and then seasoned with salt and pepper. Then if there's any jellied meat juices from the roast among the leftovers I'll add that in. To serve I put some in a bowl with a dice of roast lamb and parsley, top it with broth and stir through. Grandpa would have added Worcestershire sauce too.
